Description

One Pot Creamy Cajun Chicken Pasta is a delicious, creamy, and spicy dish made with tender chicken, pasta, and a rich Cajun-flavored sauce. It’s easy to prepare and perfect for busy weeknights.


Ingredients

  • 1 lb (450 g) chicken breasts, cut into bite-sized pieces
  • 8 oz (225 g) penne pasta (or your preferred pasta)
  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 3 cloves garlic, minced
  • 2 cups (480 ml) chicken broth
  • 1 cup (240 ml) heavy cream
  • 1 tablespoon Cajun seasoning (adjust based on spice preference)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnishing)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken, season with salt, pepper, and half of the Cajun seasoning, and sauté until golden brown (5-7 minutes). Remove chicken and set aside.
  2. In the same pot, add more olive oil if needed. Add diced onion and bell pepper, sauté for 3-4 minutes. Add minced garlic and cook for an additional minute.
  3. Add chicken broth and bring to a boil. Add penne pasta, stir well to ensure it is submerged in the liquid. Reduce heat to simmer and cook for 10-12 minutes until pasta is almost al dente.
  4. Once pasta is nearly cooked, lower heat, add heavy cream, remaining Cajun seasoning, and cooked chicken. Stir and cook for 2-3 minutes until the sauce thickens and the chicken is heated through.
  5. Remove from heat, plate the pasta, and garnish with chopped parsley. Optionally, top with grated Parmesan cheese.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or coconut milk.
  • Adjust the amount of Cajun seasoning based on your desired spice level.
  • Feel free to add extra veggies like zucchini or spinach for more flavor and nutrients.
  • If you prefer, you can use chicken thighs or tofu as an alternative to chicken breasts.
