Description

A simple and flavorful one pot lemon herb chicken and rice dish.


Ingredients

Scale
  • 1 lb chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon, juiced
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Season chicken with salt and pepper, add to the pot, and brown on both sides.
  4. Add rice, chicken broth, lemon juice, thyme, and oregano.
  5. Bring to a boil, then reduce heat to low.
  6. Cover and simmer for 20 minutes or until rice is cooked.
  7. Remove from heat and let it sit for 5 minutes.
  8. Fluff rice with a fork and garnish with parsley before serving.
