- 2 medium zucchinis
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 eggs
- Salt to taste
- Pepper to taste
- Olive oil spray
Instructions
- Preheat your oven to 425°F (220°C).
- Slice zucchinis into thin rounds.
- In a bowl, mix breadcrumbs, Parmesan cheese, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each zucchini slice in the egg, then coat with the breadcrumb mixture.
- Place the coated zucchini on a baking sheet lined with parchment paper.
- Spray the zucchini with olive oil spray.
- Bake for 20-25 minutes or until golden brown.
- Serve warm.
Notes
- For extra flavor, add garlic powder or Italian seasoning to the breadcrumb mixture.
- Ensure the zucchini slices are uniform in thickness for even cooking.
