Ingredients

  • 1 cup breadcrumbs
  • 2 eggs

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice zucchinis into thin rounds.
  3. In a bowl, mix breadcrumbs, Parmesan cheese, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip each zucchini slice in the egg, then coat with the breadcrumb mixture.
  6. Place the coated zucchini on a baking sheet lined with parchment paper.
  7. Spray the zucchini with olive oil spray.
  8. Bake for 20-25 minutes or until golden brown.
  9. Serve warm.
