- 2 pounds baby potatoes
- 1/4 cup olive oil
- 1/2 cup grated Parmesan cheese

- 1 tablespoon dried oregano
- 1 tablespoon dried thyme

Instructions
- Preheat your oven to 425°F (220°C).
- Wash and halve the baby potatoes.
- In a large bowl, mix olive oil, garlic powder, oregano, thyme, salt, and pepper.
- Add the potatoes to the bowl and toss to coat.
- Spread the potatoes on a baking sheet in a single layer.
- Sprinkle Parmesan cheese over the potatoes.
- Roast for 30-35 minutes, until golden brown and crispy.
- Serve hot and enjoy.
