Description
A delightful peach pie recipe that captures the essence of summer with its sweet, juicy filling and flaky crust.
Ingredients
- Fresh peaches: 6 cups, peeled and sliced (about 6-8 medium peaches)
- Granulated sugar: 3/4 cup
- Brown sugar: 1/4 cup
- All-purpose flour: 1/4 cup
- Ground cinnamon: 1 teaspoon
- Lemon juice: 1 tablespoon
- Vanilla extract: 1 teaspoon
- Salt: 1/4 teaspoon
- Pie crust: 2 (homemade or store-bought)
- Unsalted butter: 2 tablespoons, cut into small pieces
- Egg: 1, beaten (for egg wash)
- Granulated sugar: 1 tablespoon (for sprinkling on top)
Instructions
- Prepare the peaches by washing, peeling, and slicing them. Combine with sugars, flour, cinnamon, lemon juice, vanilla, and salt. Let sit for 15-20 minutes.
- If making a homemade crust, roll out the dough and place it in a 9-inch pie pan. Trim excess dough.
- Pour the peach filling into the crust, dot with butter, and create a lattice top with the second crust.
- Preheat the oven to 425°F (220°C). Brush the lattice crust with beaten egg and sprinkle with sugar. Bake for 45-50 minutes until golden brown and bubbly.
Notes
- Choose ripe but firm peaches for the best flavor.
- Avoid peaches with blemishes or bruises.
- Consider pre-baking the crust to prevent sogginess.
- Experiment with spices like nutmeg or ginger for added flavor.
