- 4 slices Galbani thin sliced fresh mozzarella
- 1/4 cup basil pesto
- 2 tablespoons balsamic glaze
- 1/2 lemon
- 1 cup tomatoes, diced
- 2 tablespoons basil leaves, thinly sliced
- 1 garlic clove, grated
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Combine diced tomatoes, basil leaves, grated garlic, extra virgin olive oil, red pepper flakes, salt, and pepper. Let the mixture sit for a few minutes.
- Rub chicken breasts with olive oil and season with garlic powder, Italian seasoning, salt, and black pepper.
- Cook the chicken in a heated skillet over medium-high heat for 5-7 minutes on each side until cooked through; squeeze lemon juice over chicken halfway through cooking.
- Add mozzarella on each breast, cover the skillet to melt the cheese, then top with basil pesto and bruschetta mixture, drizzling with balsamic glaze.
Notes
