Description

A delightful dish that combines zesty pesto with tender grilled chicken over a bed of pasta, making it perfect for family dinners or potlucks.


Ingredients

  • 2 boneless skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 16 ounces farfalle pasta (or penne pasta)
  • 1 cup basil pesto sauce
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, cut into strips
  • Parmesan cheese (optional)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Preheat the grill to medium-high heat and grill the chicken for 5-7 minutes per side, until cooked through.
  3. Boil a large pot of salted water and cook the pasta according to package instructions until al dente; drain and cool.
  4. In a large bowl, mix the cooled pasta with the pesto and sliced grilled chicken.
  5. Chill in the refrigerator for a while to allow flavors to meld.
  6. Before serving, stir in cherry tomatoes and fresh basil.
  7. Top with Parmesan cheese if desired.
