- 2 boneless skinless chicken breasts
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 16 ounces farfalle pasta (or penne pasta)
- 1 cup basil pesto sauce
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves, cut into strips
- Parmesan cheese (optional)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Preheat the grill to medium-high heat and grill the chicken for 5-7 minutes per side, until cooked through.
- Boil a large pot of salted water and cook the pasta according to package instructions until al dente; drain and cool.
- In a large bowl, mix the cooled pasta with the pesto and sliced grilled chicken.
- Chill in the refrigerator for a while to allow flavors to meld.
- Before serving, stir in cherry tomatoes and fresh basil.
- Top with Parmesan cheese if desired.
