Description

A delightful dish that combines tender chicken, juicy pineapple, and colorful vegetables for a quick and healthy meal.


Ingredients

  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • 1/4 cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add cubed chicken breast and cook for 5-7 minutes until golden brown. Remove and set aside.
  2. Add chopped onion, minced garlic, and diced red bell pepper to the skillet. Sauté for 3-5 minutes until softened.
  3. Add cubed pineapple and cook for 2 minutes. Stir in jasmine rice, chicken broth, soy sauce, ginger, and season with salt and pepper.
  4. Bring to a boil, then reduce heat to low, cover, and let simmer for 18-20 minutes. Once cooked, return the chicken to the skillet, mix well, and heat through for an additional 2-3 minutes.
