Ingredients
- Quinoa: 1 cup (uncooked)
- Water: 2 cups
- Cherry tomatoes: 1 cup, halved
- Cucumber: 1 medium, diced
- Bell peppers: 1 cup, diced
- Red onion: 1/4 cup, finely chopped
- Fresh parsley: 1/4 cup, chopped
- Olive oil: 3 tablespoons
- Lemon juice: 2 tablespoons, freshly squeezed
- Salt: to taste
- Pepper: to taste
Instructions
- Rinse the quinoa under cold water to remove bitterness.
- In a medium saucepan, combine rinsed quinoa with 2 cups of water and bring to a boil.
- Reduce heat to low, cover, and let simmer for about 15 minutes.
- Remove from heat and let sit covered for another 5 minutes, then fluff with a fork.
- Wash and prepare the vegetables: halve cherry tomatoes, dice cucumber, chop bell peppers, and finely chop red onion.
- In a large mixing bowl, combine the cooked quinoa with the prepared vegetables.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the quinoa and vegetable mixture and toss gently to coat.
