Description

Quinoa Vegetable Salad is a nutritious and colorful dish that combines quinoa with a variety of fresh vegetables, making it a perfect side or light main course.


Ingredients

  • Quinoa: 1 cup (uncooked)
  • Water: 2 cups
  • Cherry tomatoes: 1 cup, halved
  • Cucumber: 1 medium, diced
  • Bell peppers: 1 cup, diced
  • Red onion: 1/4 cup, finely chopped
  • Fresh parsley: 1/4 cup, chopped
  • Olive oil: 3 tablespoons
  • Lemon juice: 2 tablespoons, freshly squeezed
  • Salt: to taste
  • Pepper: to taste

Instructions

  1. Rinse the quinoa under cold water to remove bitterness.
  2. In a medium saucepan, combine rinsed quinoa with 2 cups of water and bring to a boil.
  3. Reduce heat to low, cover, and let simmer for about 15 minutes.
  4. Remove from heat and let sit covered for another 5 minutes, then fluff with a fork.
  5. Wash and prepare the vegetables: halve cherry tomatoes, dice cucumber, chop bell peppers, and finely chop red onion.
  6. In a large mixing bowl, combine the cooked quinoa with the prepared vegetables.
  7. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  8. Pour the dressing over the quinoa and vegetable mixture and toss gently to coat.
