- 2 cups cooked chicken, shredded
- 8 large eggs
- 1 cup milk
- 1 packet ranch seasoning mix
- 2 cups shredded cheddar cheese
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat.
- Add diced bell peppers and onions; sauté until soft.
- In a bowl, whisk together eggs, milk, and ranch seasoning.
- In a greased baking dish, layer shredded chicken, sautéed vegetables, and cheese.
- Pour egg mixture over the top.
- Bake for 30-35 minutes, until set and golden.
- Let cool for a few minutes before serving.
Notes
- Use rotisserie chicken for convenience.
- Feel free to add other vegetables.
- This can be prepared ahead and refrigerated.
