Description

Ingredients

  • 2 cups cooked chicken, shredded
  • 8 large eggs
  • 1 cup milk
  • 1 packet ranch seasoning mix
  • 2 cups shredded cheddar cheese
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat.
  3. Add diced bell peppers and onions; sauté until soft.
  4. In a bowl, whisk together eggs, milk, and ranch seasoning.
  5. In a greased baking dish, layer shredded chicken, sautéed vegetables, and cheese.
  6. Pour egg mixture over the top.
  7. Bake for 30-35 minutes, until set and golden.
  8. Let cool for a few minutes before serving.
