Description

A delicious blend of pasta, taco ingredients, and ranch dressing.


Ingredients

  • 8 oz rotini pasta
  • 1 cup diced tomatoes
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 cup diced bell pepper
  • 1/2 cup chopped green onions
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream

Instructions

  1. Cook pasta according to package instructions. Drain and cool.
  2. In a large bowl, combine pasta, tomatoes, black beans, corn, bell pepper, and green onions.
  3. In a separate bowl, mix ranch seasoning, mayonnaise, and sour cream.
  4. Pour dressing over pasta mixture and toss to combine.
  5. Mix in cheddar cheese.
  6. Chill in the refrigerator for at least 30 minutes before serving.
