A delicious blend of pasta, taco ingredients, and ranch dressing.
Ingredients

- 8 oz rotini pasta
- 1 cup diced tomatoes
- 1 cup black beans, rinsed and drained
- 1 cup corn
- 1 cup diced bell pepper
- 1/2 cup chopped green onions
- 1 cup shredded cheddar cheese
- 1 packet ranch seasoning mix
- 1/2 cup mayonnaise
- 1/2 cup sour cream
Instructions
- Cook pasta according to package instructions. Drain and cool.
- In a large bowl, combine pasta, tomatoes, black beans, corn, bell pepper, and green onions.
- In a separate bowl, mix ranch seasoning, mayonnaise, and sour cream.
- Pour dressing over pasta mixture and toss to combine.
- Mix in cheddar cheese.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Adjust ingredients to your taste.
- Can be made a day in advance.
- Great for potlucks or picnics.
