- 1 tablespoon of olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 4 cloves of garlic, minced
- 1 teaspoon of Jamaican jerk seasoning
- 1 cup of heavy cream (or coconut milk for a lighter option)
- 1/2 cup of grated Parmesan cheese (optional)
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish (optional)
Instructions
- Cook the pasta according to package instructions, drain, and set aside, reserving some pasta water.
- Heat olive oil in a skillet, sauté onions until translucent, then add bell peppers and cook for 5-6 minutes. Add garlic and jerk seasoning, cooking for another 1-2 minutes.
- Pour in heavy cream (or coconut milk), stirring to combine. Add Parmesan cheese if using, and cook until the sauce is creamy. Adjust consistency with reserved pasta water if needed.
- Mix the cooked pasta into the skillet with the sauce and vegetables, tossing to coat. Heat for 2-3 minutes on low to combine the flavors.
