Description

Really Quick Broccoli Pasta is a fast, flavorful dish with al dente pasta and fresh broccoli, tossed in a light garlic olive oil sauce.


Ingredients

Scale
  • 200 grams (7 oz) pasta (spaghetti, penne, or your choice)
  • 250 grams (9 oz) fresh broccoli florets
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Grated Parmesan cheese (for serving)
  • Red pepper flakes (optional, for a spicy kick)

Instructions

  1. Cook pasta in salted water according to package instructions. Reserve 1 cup of pasta water, then drain the pasta.
  2. Wash broccoli and add it to the pot with the pasta for the last 2-3 minutes of cooking. Drain pasta and broccoli together.
  3. In the same pot, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  4. Return pasta and broccoli to the pot. Toss with garlic oil. Season with salt, pepper, and red pepper flakes. Add reserved pasta water if needed for consistency.
  5. Serve immediately with grated Parmesan cheese and extra red pepper flakes, if desired.

  • Substitute olive oil with avocado or another neutral oil.
