Description
Rhubarb custard bars are a delightful dessert that combines the tartness of fresh rhubarb with a creamy custard filling, featuring a buttery crust and a smooth custard layer.
Ingredients
- Fresh rhubarb: 2 cups, chopped (about 300 grams)
- Granulated sugar: 1 cup (200 grams), divided
- Eggs: 3 large
- Vanilla extract: 1 teaspoon
- All-purpose flour: 1/2 cup (65 grams)
- Unsalted butter: 1/2 cup (113 grams), melted
- Salt: 1/4 teaspoon
Instructions
- Prepare the crust by mixing 1/4 cup of granulated sugar, melted butter, and flour in a medium bowl until it resembles coarse crumbs. Press into the bottom of a greased or lined baking dish.
- Chop the fresh rhubarb and toss it with the remaining 3/4 cup of granulated sugar. Set aside.
- In a large mixing bowl, whisk together the eggs, vanilla extract, and salt. Gradually add the flour, stirring until smooth. Fold in the sugared rhubarb.
- Pour the custard mixture over the pre-baked crust and spread evenly.
- Bake for an additional 25-30 minutes until the custard is set and lightly golden.
- Let the bars cool in the pan on a wire rack, then cut into squares or bars and serve.
Notes
- Choose fresh, vibrant rhubarb stalks for the best flavor.
- Adjust the sugar based on your sweetness preference.
- For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend.
- Consider adding other fruits like strawberries or blueberries for variation.
