Description

Rhubarb custard bars are a delightful dessert that combines the tartness of fresh rhubarb with a creamy custard filling, featuring a buttery crust and a smooth custard layer.

Ingredients

  • Fresh rhubarb: 2 cups, chopped (about 300 grams)
  • Granulated sugar: 1 cup (200 grams), divided
  • Eggs: 3 large
  • Vanilla extract: 1 teaspoon
  • All-purpose flour: 1/2 cup (65 grams)
  • Unsalted butter: 1/2 cup (113 grams), melted
  • Salt: 1/4 teaspoon

Instructions

  1. Prepare the crust by mixing 1/4 cup of granulated sugar, melted butter, and flour in a medium bowl until it resembles coarse crumbs. Press into the bottom of a greased or lined baking dish.
  2. Chop the fresh rhubarb and toss it with the remaining 3/4 cup of granulated sugar. Set aside.
  3. In a large mixing bowl, whisk together the eggs, vanilla extract, and salt. Gradually add the flour, stirring until smooth. Fold in the sugared rhubarb.
  4. Pour the custard mixture over the pre-baked crust and spread evenly.
  5. Bake for an additional 25-30 minutes until the custard is set and lightly golden.
  6. Let the bars cool in the pan on a wire rack, then cut into squares or bars and serve.

Notes

  • Choose fresh, vibrant rhubarb stalks for the best flavor.
  • Adjust the sugar based on your sweetness preference.
  • For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend.
  • Consider adding other fruits like strawberries or blueberries for variation.
