Description

Lahanorizo is a traditional Greek dish of rice and cabbage cooked in a flavorful tomato sauce with herbs and vegetables. Nutritious, hearty, and easy to prepare.


Ingredients

  • 1 kg shredded cabbage
  • 180 g finely chopped onion
  • 2 garlic cloves, minced
  • 1 stick celery, chopped
  • 80 g chopped leek
  • 180 g sliced carrots
  • 100 g finely chopped sweet red pepper
  • 400 g diced canned tomatoes
  • 1 1/2 tsp tomato paste
  • 5 tbsp olive oil
  • 1 dried bay leaf
  • 190 g long-grain rice
  • 1 tbsp chopped fresh parsley
  • 1 1/2 tsp thyme
  • 3 1/2 cups hot water or stock
  • Freshly ground pepper, to taste
  • Lemon wedges, for serving

Instructions

  1. Heat olive oil in a large pot over high heat.
  2. Sauté finely chopped onion and leek until soft and translucent.
  3. Add minced garlic; cook for about 1 minute until fragrant.
  4. Add sliced carrots and chopped sweet red pepper; cook until they begin to soften.
  5. Add shredded cabbage in batches, sprinkling salt to help soften; cook until tender and reduced in volume.
  6. Add chopped celery, dried bay leaf, diced tomatoes, tomato paste, and freshly ground pepper; stir and cook for 1 minute.
  7. Pour in 2 cups hot water or stock; cover and simmer over medium heat for 15 minutes.
  8. Remove lid, stir in chopped parsley, thyme, and long-grain rice; add remaining hot water or stock and extra olive oil; mix well.
  9. Cover and simmer on low heat for 15-20 minutes until rice is cooked and liquid absorbed; avoid sticking.
  10. Remove from heat; let rest uncovered for 5-10 minutes.
  11. Serve warm, garnished with freshly ground pepper and a squeeze of lemon.

Notes

  • Add cabbage in batches to avoid overcrowding and ensure it wilts properly.
  • Taste and adjust seasoning as you cook, especially salt and pepper.
  • Use high-quality olive oil and fresh herbs for best flavor.
  • Resting the dish after cooking enhances flavor and texture.
