A fresh and vibrant salad featuring roasted beets and creamy goat cheese.
Ingredients

- 4 medium beets, roasted and sliced
- 4 oz goat cheese, crumbled
- 4 cups mixed greens
- 1/4 cup walnuts, toasted
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap beets in foil and roast for 45-60 minutes until tender.
- Let beets cool, then peel and slice.
- In a large bowl, combine mixed greens, roasted beets, goat cheese, and walnuts.
- In a small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper.
- Drizzle dressing over salad and toss gently.
- Serve immediately.
