- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup shredded cabbage
- 1 avocado, sliced
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, toss cauliflower florets with olive oil, cumin, paprika, salt, and pepper.
- Spread the cauliflower on a baking sheet in a single layer.
- Roast for 25-30 minutes until golden and tender.
- Warm the corn tortillas in a pan over medium heat.
- Assemble tacos by placing roasted cauliflower, shredded cabbage, and avocado on each tortilla.
- Garnish with fresh cilantro and serve with lime wedges.
Notes
- Can add your favorite hot sauce for extra flavor.
