- 8 ounces cream cheese, softened
- 1 can (10 ounces) Rotel tomatoes and green chilies, drained
- 2 cups shredded cheddar cheese
- 1 ½ cups Bisquick baking mix
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
- In a large bowl, mix uncooked spicy sausage, softened cream cheese, and drained Rotel tomatoes and green chilies until well combined.
- Add shredded cheddar cheese and Bisquick baking mix; stir until evenly incorporated, avoiding overmixing.
- Roll mixture into 1-inch balls using a spoon or cookie scoop, dampening hands if needed, and place on baking sheet with space between each ball.
- Bake for 20-25 minutes until golden brown and cooked through. Check doneness by cutting one in half.
- Remove from oven, let cool for a few minutes, then serve warm with optional dipping sauces.
