Description

Delicious and easy-to-make Rotel Cream Cheese Sausage Balls featuring spicy breakfast sausage, cream cheese, cheddar, and zesty Rotel tomatoes and green chilies. Perfect for parties, game days, or snacks.

Ingredients

Scale
  • 1 pound spicy breakfast sausage, uncooked
  • 8 ounces cream cheese, softened
  • 1 can (10 ounces) Rotel tomatoes and green chilies, drained
  • 2 cups shredded cheddar cheese
  • 1 ½ cups Bisquick baking mix

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, mix uncooked spicy sausage, softened cream cheese, and drained Rotel tomatoes and green chilies until well combined.
  3. Add shredded cheddar cheese and Bisquick baking mix; stir until evenly incorporated, avoiding overmixing.
  4. Roll mixture into 1-inch balls using a spoon or cookie scoop, dampening hands if needed, and place on baking sheet with space between each ball.
  5. Bake for 20-25 minutes until golden brown and cooked through. Check doneness by cutting one in half.
  6. Remove from oven, let cool for a few minutes, then serve warm with optional dipping sauces.

Notes

  • Allow cream cheese to soften at room temperature for easier mixing.
  • Do not overcrowd the baking sheet to ensure even browning.
  • Add garlic powder, onion powder, or hot sauce for extra flavor.
  • Substitute mild sausage for a less spicy version.
  • Store leftovers in an airtight container in the refrigerator up to 3 days or freeze for up to 3 months.
  • To freeze, freeze sausage balls on a sheet first, then transfer to a freezer bag.
  • Reheat frozen sausage balls in a 350°F (175°C) oven for 10-15 minutes.
