A refreshing and hearty salad featuring salami, mozzarella, and tortellini.
Ingredients

- 8 oz cheese tortellini
- 4 oz salami, diced
- 4 oz mozzarella cheese, cubed
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- Salt and pepper to taste
Instructions
- Cook the tortellini according to package instructions. Drain and let cool.
- In a large bowl, combine the salami, mozzarella, cherry tomatoes, black olives, red onion, and basil.
- Add the cooled tortellini to the bowl.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- This salad can be made ahead of time.
- Feel free to add other vegetables like bell peppers or cucumbers.
- For extra flavor, add Italian seasoning to the dressing.
