Description

A refreshing and hearty salad featuring salami, mozzarella, and tortellini.


Ingredients

  • 8 oz cheese tortellini
  • 4 oz salami, diced
  • 4 oz mozzarella cheese, cubed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions. Drain and let cool.
  2. In a large bowl, combine the salami, mozzarella, cherry tomatoes, black olives, red onion, and basil.
  3. Add the cooled tortellini to the bowl.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Chill in the refrigerator for 30 minutes before serving.

Notes

  • This salad can be made ahead of time.
  • Feel free to add other vegetables like bell peppers or cucumbers.
