- 1 tablespoon butter
- 3 garlic cloves, minced
- 1 tablespoon all-purpose flour
- 1 1/4 cups heavy cream
- Juice and zest of 1 lemon
- 2 tablespoons chopped dill
- Crushed red pepper flakes, to taste (optional)
Instructions
- Season salmon fillets with kosher salt and freshly ground black pepper on both sides.
- Heat olive oil in a skillet over medium-high heat. Sear salmon skin side up for about 5 minutes until golden brown.
- Flip salmon and cook skin side down for another 5 minutes until skin is crispy. Remove salmon and set aside.
- Reduce heat to medium-low and add butter to the skillet. Once melted, sauté minced garlic for about 30 seconds until fragrant.
- Sprinkle flour into the skillet and stir into garlic for about 1 minute to form a roux.
- Slowly whisk in heavy cream and cook over medium-low heat until thickened.
- Add lemon zest, lemon juice, chopped dill, and season with salt and pepper to taste. Stir to combine.
- Return salmon to the skillet, spoon sauce over each fillet, and cook for 2 minutes to warm through.
- Serve immediately, garnished with extra dill or parsley if desired.
