- 8 oz pasta (penne, rigatoni, or your choice)
- 1 lb sausage (Italian sausage or any preferred type)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken or vegetable broth
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper to taste
- 1 cup spinach or kale (optional)
- 1/2 cup grated Parmesan cheese (for topping)
- 2 tbsp olive oil
Instructions
- Cook the pasta according to the package instructions until al dente, then drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add the sausage and cook until browned, about 5-7 minutes. Transfer to a plate and set aside.
- In the same skillet, sauté the diced onion and garlic in the remaining oil until the onion becomes translucent, about 3-4 minutes.
- Return the sausage to the skillet. Add the diced tomatoes, chicken broth, Italian seasoning, and red pepper flakes. Stir to combine and simmer for 5 minutes.
- Add the cooked pasta to the skillet, tossing to combine. Use reserved pasta water to adjust sauce consistency. Add spinach or kale and cook until wilted.
- Serve the pasta hot, garnished with grated Parmesan cheese.

- For a lighter option, substitute regular sausage with turkey or chicken sausage.
