- 400 g chicken thighs, cut into small pieces
- 2 cups scallion, chopped (white and green parts separated)
- 4 tablespoons oil (for frying)
- 2 tablespoons soy sauce
- 1/2 tablespoon dark soy sauce
- 1/2 tablespoon oyster sauce
- 1/2 teaspoon black pepper powder
- 2 tablespoons corn starch
Instructions
- In a bowl, combine chicken pieces with soy sauce, dark soy sauce, oyster sauce, black pepper, and corn starch. Mix well and marinate for 10 minutes.
- Heat oil in a non-stick pan over medium heat. Add marinated chicken in a single layer without overcrowding.
- Pan-fry chicken, turning occasionally, until cooked through and golden, about 6-8 minutes. Cover with lid if pieces are large.
- Add white parts of scallions to the pan and cook for 2-3 minutes until fragrant and softened.
- Stir in green parts of scallions and cook briefly for 10-20 seconds until slightly wilted.
- Taste and adjust seasoning if needed. Serve hot over rice or noodles.
