Description

Scallion Chicken Thighs feature tender chicken marinated in savory sauces and cooked with fresh scallions for a quick, flavorful meal.


Ingredients

  • 400 g chicken thighs, cut into small pieces
  • 2 cups scallion, chopped (white and green parts separated)
  • 4 tablespoons oil (for frying)
  • 2 tablespoons soy sauce
  • 1/2 tablespoon dark soy sauce
  • 1/2 tablespoon oyster sauce
  • 1/2 teaspoon black pepper powder
  • 2 tablespoons corn starch

Instructions

  1. In a bowl, combine chicken pieces with soy sauce, dark soy sauce, oyster sauce, black pepper, and corn starch. Mix well and marinate for 10 minutes.
  2. Heat oil in a non-stick pan over medium heat. Add marinated chicken in a single layer without overcrowding.
  3. Pan-fry chicken, turning occasionally, until cooked through and golden, about 6-8 minutes. Cover with lid if pieces are large.
  4. Add white parts of scallions to the pan and cook for 2-3 minutes until fragrant and softened.
  5. Stir in green parts of scallions and cook briefly for 10-20 seconds until slightly wilted.
  6. Taste and adjust seasoning if needed. Serve hot over rice or noodles.
