Ingredients

- 1 lb chicken breast, diced
- 1 cup cashews
- 2 cups mixed vegetables (broccoli, bell peppers, carrots)
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix chicken, soy sauce, honey, olive oil, garlic powder, ginger powder, salt, and pepper.
- Add mixed vegetables and cashews to the bowl.
- Toss everything together until well coated.
- Spread the mixture evenly on a sheet pan.
- Bake for 25-30 minutes until chicken is cooked through.
- Serve hot and enjoy.
