Instructions
- Preheat the oven to 425°F (220°C). In a large mixing bowl, combine chicken strips with olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Toss to coat evenly.
- Add sliced bell peppers and onion to the bowl and toss to coat with the spices.
- Line a large baking sheet with parchment paper or lightly grease it. Spread the seasoned chicken and vegetables in a single layer on the baking sheet.
- Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through (internal temperature of 165°F or 75°C) and the vegetables are tender. Stir halfway through cooking for even roasting.
- Warm tortillas in a pan or microwave. Serve the chicken and veggies on the tortillas, garnish with fresh cilantro and a squeeze of lime, then roll up and enjoy!
