Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb smoked sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups chicken broth
  • 2 tablespoons vegetable oil
  • 2 tablespoons Cajun seasoning
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups cooked rice

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add sausage and cook until browned.
  3. Add onion, bell pepper, celery, and garlic. Cook until soft.
  4. Stir in Cajun seasoning and cook for 1 minute.
  5. Add diced tomatoes, chicken broth, and bay leaf. Bring to a boil.
  6. Reduce heat and simmer for 30 minutes.
  7. Add shrimp and cook for 5 minutes until shrimp are pink.
  8. Season with salt and pepper.
  9. Serve over cooked rice.
