Description

Shrimp Scampi Pasta Bake combines tender shrimp, perfectly cooked pasta, and a creamy garlic-infused sauce, topped with a golden, cheesy crust.


Ingredients

  • 8 ounces of pasta (such as linguine or penne)
  • 1 pound of shrimp (peeled and deveined)
  • 4 tablespoons of unsalted butter
  • 4 cloves of garlic (minced)
  • 1/2 cup of white wine (or chicken broth)
  • 1 cup of heavy cream
  • 1 teaspoon of lemon zest
  • 1/4 cup of lemon juice
  • 1/2 teaspoon of red pepper flakes (optional for spice)
  • 1 cup of grated Parmesan cheese
  • 1 cup of shredded mozzarella cheese
  • Salt and pepper (to taste)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat and cook shrimp for 2-3 minutes per side, until pink and opaque. Remove from skillet and set aside.
  3. In the same skillet, melt the remaining butter and sauté garlic for 1 minute. Add white wine (or chicken broth) and simmer for 2 minutes. Stir in heavy cream, lemon zest, lemon juice, and red pepper flakes. Season with salt and pepper and cook for another 2-3 minutes.
  4. Preheat oven to 350°F (175°C). In a large bowl, mix the cooked pasta, shrimp, and sauce. Transfer to a greased 9×13-inch baking dish and top with Parmesan and mozzarella cheese.
  5. Bake for 20-25 minutes, or until the cheese is golden brown and bubbly. Let it rest for 5 minutes before serving.

Notes

  • Be careful not to overcook the shrimp to avoid rubberiness.
  • Use fresh garlic and lemons for a more vibrant flavor.
  • Let the dish rest after baking for easier portioning.
