  • 3 cups chicken broth (or water)
  • 1 cup grated Parmesan cheese

  • 1 teaspoon dried Italian herbs (oregano, thyme, rosemary mix)

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken 6-7 minutes per side until golden and internal temperature reaches 165°F (75°C). Remove and let rest.
  2. In the same skillet, sauté diced onion and minced garlic for 3-4 minutes until translucent and fragrant, scraping up browned bits.
  3. Add rice to skillet and stir 1-2 minutes to toast. Pour in chicken broth and add dried Italian herbs. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until rice is tender.
  4. Stir grated Parmesan into cooked rice until melted and well combined. Return chicken breasts to skillet, nestle into rice, cover, and heat for 5 minutes to meld flavors.
