Description

A savory and hearty beef casserole with tender marinated beef, colorful vegetables, and a rich sauce, slow-cooked to perfection.


Ingredients

  • 2 tbsp olive oil
  • 600 g braising beef, chopped into chunks
  • 2 tbsp plain flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 cloves garlic, peeled and minced
  • 330 ml Guinness or other ale
  • 360 ml beef stock
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 small courgette, chopped into chunks
  • 3 tbsp grated parmesan cheese (for topping)
  • Freshly chopped parsley (for serving)
  • 1/4 red onion, peeled and thinly sliced (for serving)
  • Cooked couscous (to serve)

Instructions

  1. Preheat your oven to 160C (325F).
  2. In a Dutch oven, heat olive oil over medium-high heat. Toss the beef with flour, salt, and pepper. Brown the beef on all sides for about 5-7 minutes.
  3. Add minced garlic, then pour in Guinness and beef stock, stirring to combine.
  4. Cover and slow cook in the oven for about 3 hours.
  5. Add chopped peppers and courgette, cover, and cook for an additional 5 minutes.
  6. Sprinkle grated parmesan cheese over the casserole before serving.

Notes

Consider serving with a fresh green salad and crusty bread for a complete meal.
