A hearty and flavorful slow cooker chicken and sweet potato chili.
Ingredients

- 1 lb boneless chicken breasts
- 2 medium sweet potatoes, diced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the slow cooker.
- Add the diced sweet potatoes, black beans, diced tomatoes, onion, garlic, and chicken broth.
- Sprinkle in the chili powder, cumin, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken before serving.

- Adjust spices to your taste.
- Top with avocado or cilantro if desired.
