S’mores cookie bars are a delightful twist on the classic campfire treat, combining graham crackers, chocolate, and marshmallows into a chewy, cookie-like bar.

- 1 ½ cups graham cracker crumbs
- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 cup brown sugar, packed
- ½ cup unsalted butter, melted
- 2 large eggs
- 1 cup chocolate chips
- 1 cup mini marshmallows
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 9×13-inch baking pan by greasing it or lining it with parchment paper.
- In a large mixing bowl, combine graham cracker crumbs, flour, cocoa powder, brown sugar, and salt. Mix well.
- Add melted butter and vanilla extract to the dry ingredients, then add eggs and mix until a thick dough forms.
- Press two-thirds of the dough into the bottom of the prepared baking pan. Sprinkle chocolate chips and mini marshmallows on top.
- Crumble the remaining dough over the marshmallows and chocolate chips.
- Bake for 25-30 minutes until the edges are set and golden brown.
- Let cool for 15-20 minutes before cutting into squares or rectangles.
