- 1 large egg
- 1 teaspoon garlic powder

- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika (optional)
- Olive oil or vegetable oil (for frying)
- Fresh herbs (such as parsley or chives) for garnish
- Dipping sauce of your choice (e.g., sour cream, ranch, or aioli)
Instructions
- Peel and quarter the russet potatoes, then boil in salted water until fork-tender (15-20 minutes). Drain and cool slightly.
- Mash the cooled potatoes until smooth, then mix in flour, Parmesan cheese, egg, garlic powder, onion powder, salt, black pepper, and paprika until well combined.
- Shape the mixture into golf ball-sized bites and place on a parchment-lined baking sheet.
- Heat oil in a skillet over medium heat and fry the bites in batches for 3-4 minutes on each side until golden brown. Drain on paper towels.
Notes
- For a healthier option, bake the bites at 400°F (200°C) for 25-30 minutes, flipping halfway through.
