A hearty Southwestern breakfast casserole with eggs, tortillas, and cheese.
Ingredients

- 8 large eggs
- 2 cups milk
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup cooked chorizo
- 2 cups corn tortillas, cut into strips
- 1 cup shredded cheese (cheddar or pepper jack)
- 1 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 cup diced tomatoes
Instructions
- Preheat the oven to 350°F.
- In a large bowl, whisk together eggs, milk, salt, and pepper.
- In a greased baking dish, layer the tortilla strips, chorizo, bell peppers, onions, and tomatoes.
- Pour the egg mixture over the layers.
- Sprinkle cheese on top.
- Bake for 30-35 minutes or until set.
- Let cool for 5 minutes before serving.
Notes
- Customize with your favorite vegetables.
- Can be made ahead and refrigerated overnight.
- Reheat leftovers in the microwave.
