- 2 cups cooked spaghetti
- 1 cup shredded mozzarella cheese (or cheese of choice)
- 4 slices bread (white, whole grain, or sourdough)
- 2 tablespoons butter (or more as needed)
- ¼ cup grated Parmesan cheese (optional)
- Salt and pepper to taste
- ½ teaspoon garlic powder (optional)
- ½ teaspoon Italian seasoning (optional)
Instructions
- Cook spaghetti as per package if not pre-cooked. Drain and return to pot.
- While warm, stir in mozzarella, garlic powder, Italian seasoning, salt, and pepper until cheese melts.
- Butter one side of each bread slice.
- On unbuttered side of one slice, spread a generous amount of cheesy spaghetti mixture evenly.
- Top with another slice, buttered side up; repeat for second sandwich if desired.
- Heat skillet over medium heat, place sandwiches in pan, cook 3-4 minutes until golden brown.
- Flip and cook other side 3-4 minutes until crispy and cheese inside is melted.
- Remove, let cool briefly, then slice and serve warm.
