- 1 ¾ cups all-purpose flour (220 g)
- 1 teaspoon baking soda
- ½ teaspoon baking powder

- 1 cup granulated sugar (200 g)
- ½ cup brown sugar, packed (100 g)

- ½ cup chopped walnuts or pecans (optional)
- 2 tablespoons cinnamon sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a medium bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
- In a large mixing bowl, combine granulated sugar, brown sugar, and vegetable oil. Mix well, then add eggs one at a time, beating well after each addition. Stir in pumpkin puree and vanilla extract until smooth.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Fold in nuts if desired.
- Pour the batter into the prepared loaf pan and smooth the top. Sprinkle cinnamon sugar on top.
- Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean. Tent with aluminum foil if the top browns too quickly.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
