Ingredients

- 1 cup sushi rice
- 1 1/4 cups water
- 1/2 lb sushi-grade tuna, diced
- 1 avocado, sliced
- 2 tablespoons mayonnaise
- 1 tablespoon sriracha
- 1 teaspoon soy sauce
- 1 green onion, sliced
- 1 tablespoon sesame seeds
- Salt, to taste
Instructions
- Rinse sushi rice under cold water until water runs clear.
- Combine rice and water in a pot and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Remove from heat and let sit for 10 minutes.
- In a bowl, mix tuna, mayonnaise, sriracha, and soy sauce.
- Fluff the rice and season with salt.
- Divide rice into bowls and top with spicy tuna and avocado.
- Garnish with green onion and sesame seeds.

- Adjust sriracha for desired spice level.
