Description
A hearty potato salad with a steakhouse twist.
Ingredients

- 2 pounds potatoes, diced
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1/4 cup chopped green onions
- 1/2 cup cooked bacon, crumbled
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- Boil the potatoes until tender, about 15 minutes.
- Drain and let cool.
- In a bowl, mix sour cream, mayonnaise, mustard, salt, and pepper.
- Add cooled potatoes, green onions, and bacon to the dressing.
- Toss gently to combine.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- Use red or Yukon gold potatoes for best flavor.
- Feel free to add more toppings like cheese or herbs.
- This salad can be made a day ahead.
