- 2 medium sweet potatoes
- 1 ripe avocado
- 1 lime, juiced
- 1 tablespoon olive oil

Instructions
- Preheat your oven to 400°F (200°C).
- Slice sweet potatoes into 1/4 inch rounds.
- Toss sweet potato slices with olive oil, salt, and pepper.
- Arrange on a baking sheet and bake for 25-30 minutes until tender.
- While sweet potatoes cook, mash avocado in a bowl.
- Add lime juice, salt, and pepper to the mashed avocado.
- Once sweet potatoes are done, let them cool slightly.
- Top each slice with the avocado mixture.
- Garnish with fresh cilantro before serving.
