Ingredients

  • 4 medium carrots, sliced
  • 2 tablespoons gochujang
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 cup plain yogurt
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • Salt to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix gochujang, honey, rice vinegar, sesame oil, garlic, and salt.
  3. Add carrot slices to the mixture and coat evenly.
  4. Spread the carrots on a baking sheet.
  5. Bake for 20-25 minutes or until tender.
  6. While carrots bake, prepare yogurt in a serving dish.
  7. Once carrots are done, place them atop the yogurt.
  8. Garnish with chopped green onions.

Notes

  • Adjust sweetness by adding more or less honey.
  • Use Greek yogurt for a thicker texture.
