Swicy gochujang carrots served on yogurt, a bold and elegant side dish.
Ingredients

- 4 medium carrots, sliced
- 2 tablespoons gochujang
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 cup plain yogurt
- 1 tablespoon sesame oil
- 1 teaspoon garlic, minced
- Salt to taste
- Chopped green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix gochujang, honey, rice vinegar, sesame oil, garlic, and salt.
- Add carrot slices to the mixture and coat evenly.
- Spread the carrots on a baking sheet.
- Bake for 20-25 minutes or until tender.
- While carrots bake, prepare yogurt in a serving dish.
- Once carrots are done, place them atop the yogurt.
- Garnish with chopped green onions.
Notes
- Adjust sweetness by adding more or less honey.
- Use Greek yogurt for a thicker texture.
- Serve warm or at room temperature.
