Description

A delicious homemade version of Taco Bell’s Beefy Melt Burrito featuring seasoned ground beef, cheese, crunchy chips, and Mexican rice wrapped in a warm flour tortilla.


Ingredients

  • 1 pound lean ground beef
  • 1 ounce packet taco seasoning
  • 1/4 cup water or beef broth
  • 1 cup refried beans (optional)
  • 2 cups cooked Mexican rice or instant Mexican rice
  • 4 burrito-sized flour tortillas
  • 2 cups Fritos or Doritos
  • 1 cup cheese dip, warmed
  • 1 cup shredded Mexican cheese blend
  • 1/2 cup sour cream
  • Salsa (if desired)

Instructions

  1. Cook the ground beef over medium heat until no longer pink, breaking it apart as it cooks.
  2. Add taco seasoning and water or beef broth, stir and cook for another minute to blend flavors.
  3. If using, mix in refried beans thoroughly into the beef mixture.
  4. Prepare Mexican rice according to package or reheat leftover rice.
  5. Warm the flour tortillas in the microwave for about 30 seconds to make them pliable.
  6. Lay a warm tortilla flat, add beef mixture, rice, chips, cheese dip, shredded cheese, sour cream, and salsa if desired.
  7. Fold sides and roll tightly to form the burrito, repeating for remaining tortillas.
  8. Optionally, toast the rolled burritos in a heated pan over medium heat until golden brown for extra crunch.
  9. Serve warm with salsa, guacamole, or preferred sides.
