Description

A homemade version of the famous Taco Bell Chicken Quesadilla with shredded chicken, a creamy jalapeño sauce, melted cheese, and crispy tortillas.


Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 3 tablespoons pickled jalapeño juice
  • 3 tablespoons pickled jalapeños, chopped
  • 1 clove garlic, minced
  • 2 teaspoons cumin
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon cayenne powder
  • Salt and pepper, to taste
  • 8 medium flour tortillas
  • 4 cups shredded rotisserie chicken
  • 4 cups shredded cheese blend (Monterey Jack, American, Mozzarella)

Instructions

  1. In a bowl, mix mayonnaise, sour cream, pickled jalapeño juice, chopped jalapeños, garlic, cumin, smoked paprika, cayenne, salt, and pepper to make the jalapeño sauce.
  2. Shred the rotisserie chicken and toss it with some of the jalapeño sauce to coat. Set remaining sauce aside for dipping.
  3. Heat a skillet over medium heat. Place one tortilla in the skillet.
  4. Sprinkle cheese evenly over the tortilla, then add a layer of the coated chicken, followed by another layer of cheese.
  5. Top with a second tortilla and cook for about 1 minute until the bottom tortilla is golden brown.
  6. Flip carefully and cook the other side until golden and cheese is melted, about 30-60 seconds.
  7. Remove from skillet, let cool slightly, then slice into wedges. Serve with remaining jalapeño sauce.

Notes

  • Use Greek yogurt or vegan mayo as a healthier mayo substitute.
  • Replace sour cream with plain Greek yogurt if desired.
