Description
A homemade version of the famous Taco Bell Chicken Quesadilla with shredded chicken, a creamy jalapeño sauce, melted cheese, and crispy tortillas.

- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 3 tablespoons pickled jalapeño juice
- 3 tablespoons pickled jalapeños, chopped
- 1 clove garlic, minced
- 2 teaspoons cumin
- 2 teaspoons smoked paprika
- 1/2 teaspoon cayenne powder
- Salt and pepper, to taste
- 8 medium flour tortillas
- 4 cups shredded rotisserie chicken
- 4 cups shredded cheese blend (Monterey Jack, American, Mozzarella)
Instructions
- In a bowl, mix mayonnaise, sour cream, pickled jalapeño juice, chopped jalapeños, garlic, cumin, smoked paprika, cayenne, salt, and pepper to make the jalapeño sauce.
- Shred the rotisserie chicken and toss it with some of the jalapeño sauce to coat. Set remaining sauce aside for dipping.
- Heat a skillet over medium heat. Place one tortilla in the skillet.
- Sprinkle cheese evenly over the tortilla, then add a layer of the coated chicken, followed by another layer of cheese.
- Top with a second tortilla and cook for about 1 minute until the bottom tortilla is golden brown.
- Flip carefully and cook the other side until golden and cheese is melted, about 30-60 seconds.
- Remove from skillet, let cool slightly, then slice into wedges. Serve with remaining jalapeño sauce.
Notes
- Use Greek yogurt or vegan mayo as a healthier mayo substitute.
- Replace sour cream with plain Greek yogurt if desired.
- Fresh jalapeños can replace pickled ones; adjust spice accordingly.
- Try different cheese blends like cheddar or pepper jack for varied flavor.
- Brush tortillas lightly with oil for extra crispiness.
