Description

Taco pasta combines the flavors of classic tacos with pasta, creating a hearty, flavorful, and easy-to-make dish. Perfect for busy nights or gatherings.


Ingredients

  • 1 pound of ground beef or turkey
  • 8 ounces of rotini or penne pasta
  • 1 packet of taco seasoning (about 1 ounce)
  • 1 can (15 ounces) of black beans, drained and rinsed
  • 1 cup of frozen corn
  • 1 can (14.5 ounces) of diced tomatoes (with or without green chilies)
  • 1 cup of shredded cheddar cheese
  • 1 cup of chicken or vegetable broth
  • ¼ cup of chopped fresh cilantro (optional)
  • Salt and pepper to taste
  • Optional toppings: diced avocado, sour cream, sliced jalapeños

Instructions

  1. Boil salted water and cook rotini or penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, cook the ground beef or turkey over medium heat for 5-7 minutes until browned. Drain any excess fat if using beef.
  3. Lower heat to medium-low. Add diced tomatoes, black beans, corn, taco seasoning, and chicken broth to the skillet. Stir until well combined and heated through.
  4. Add the drained pasta to the skillet. Stir gently, then add shredded cheddar cheese, letting it melt and coat the pasta and meat mixture.
  5. Season with salt and pepper to taste. Garnish with cilantro, and serve hot with optional toppings such as avocado, sour cream, or jalapeños.
