- 1 pound of ground beef or turkey
- 8 ounces of rotini or penne pasta
- 1 packet of taco seasoning (about 1 ounce)
- 1 can (15 ounces) of black beans, drained and rinsed
- 1 cup of frozen corn
- 1 can (14.5 ounces) of diced tomatoes (with or without green chilies)
- 1 cup of shredded cheddar cheese
- 1 cup of chicken or vegetable broth
- ¼ cup of chopped fresh cilantro (optional)
- Salt and pepper to taste
- Optional toppings: diced avocado, sour cream, sliced jalapeños
Instructions
- Boil salted water and cook rotini or penne pasta according to package instructions. Drain and set aside.
- In a large skillet, cook the ground beef or turkey over medium heat for 5-7 minutes until browned. Drain any excess fat if using beef.
- Lower heat to medium-low. Add diced tomatoes, black beans, corn, taco seasoning, and chicken broth to the skillet. Stir until well combined and heated through.
- Add the drained pasta to the skillet. Stir gently, then add shredded cheddar cheese, letting it melt and coat the pasta and meat mixture.
- Season with salt and pepper to taste. Garnish with cilantro, and serve hot with optional toppings such as avocado, sour cream, or jalapeños.
