Description

A fresh and flavorful Tex-Mex Chicken Salad that combines grilled chicken with colorful vegetables and a zesty dressing.


Ingredients

  • 1 cup corn, canned or fresh
  • 1 cup black beans, drained and rinsed
  • 1 avocado, diced
  • 1/2 cup red onion, diced

  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chicken, tomatoes, corn, black beans, avocado, red onion, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
