Description

Thai Basil Fried Rice is a flavorful and spicy Thai dish made with jasmine rice, chicken thighs, Thai basil, vegetables, and a mix of savory sauces. It’s quick to prepare and offers a delicious balance of heat, aroma, and umami flavor.


Ingredients

  • 4 cups day-old cold cooked jasmine rice
  • 1 lb boneless skinless chicken thighs
  • 2 tbsp peanut oil
  • 1 yellow onion, diced
  • 1 small bell pepper, chopped
  • 4 garlic cloves, minced
  • 12 Thai chili peppers, minced
  • 2 eggs, beaten with a pinch of salt
  • 1 cup fresh Thai basil
  • 3 tbsp fish sauce
  • 2 tbsp oyster sauce
  • 1 tbsp honey
  • 2 tsp Thai roasted red chili paste
  • 1/4 tsp white pepper
  • Pinch of salt to taste

Instructions

  1. Prepare all ingredients: dice chicken, chop vegetables, mince garlic and chilies, and whisk the eggs with salt. Mix all sauce ingredients in a bowl and set aside.
  2. Heat a wok over medium-high heat. Add peanut oil and sauté chicken with a pinch of salt until almost cooked through. Push chicken to one side of the pan.
  3. Add onion and bell pepper to the pan. Stir-fry for 2-3 minutes until softened, then mix with the chicken.
  4. Add garlic and Thai chili peppers to the pan. Sauté until fragrant, about 30 seconds, being careful not to burn the garlic.
  5. Push everything to the side again, add a little more oil if needed, then pour in the whisked eggs. Scramble until mostly set, then mix with other ingredients.
  6. Add cold rice and break up clumps. Pour in the sauce mixture and stir well to combine.
  7. Add Thai basil and stir gently until wilted. Taste and adjust seasoning if needed. Serve hot.

Notes

  • Use day-old rice for best texture.
  • Adjust the number of Thai chilies based on desired spice level.
  • Substitute chicken with tofu, shrimp, or beef if preferred.
  • For a vegetarian version, use soy sauce instead of fish sauce and omit oyster sauce.
  • Garnish with extra basil leaves for presentation.
