Description

Ingredients

  • 2 ripe mangoes, peeled and julienned
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup crushed peanuts
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 teaspoon chili flakes

Instructions

  1. In a large bowl, combine the mangoes, bell pepper, cucumber, carrot, and cilantro.
  2. In a separate bowl, whisk together lime juice, fish sauce, sugar, and chili flakes.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Top with crushed peanuts before serving.
