Ingredients

- 2 medium sweet potatoes, cubed
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked quinoa
- 1 cup broccoli, steamed
- 1/2 cup carrots, shredded
- 1/4 cup green onions, chopped
- 1/2 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon lime juice
- 1/4 cup water
Instructions
- Preheat the oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25-30 minutes.
- In a bowl, mix peanut butter, soy sauce, maple syrup, lime juice, and water.
- In serving bowls, layer quinoa, roasted sweet potatoes, broccoli, and carrots.
- Drizzle peanut sauce over the bowls.
- Garnish with green onions.
Notes
- Feel free to add other vegetables.
- Adjust the peanut sauce consistency with more water if needed.
- This dish can be prepared in advance and stored in the fridge.
