Ingredients

  • 8 ounces of pasta (fettuccine or penne works well)
  • 1 pound of chicken breast, cut into bite-sized pieces
  • 2 tablespoons of olive oil
  • 1 small onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 cup of heavy cream
  • 1 cup of chicken broth
  • 1 cup of grated Parmesan cheese
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Reserve half a cup of pasta water and drain the rest.
  2. In a large skillet, heat olive oil over medium heat. Add chicken, season with salt and pepper, and cook for 5-7 minutes until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. In the same skillet, sauté the chopped onion for 2-3 minutes, then add minced garlic and cook for another minute until fragrant.
  4. Pour in chicken broth and heavy cream. Bring to a simmer and stir in Italian seasoning and Parmesan cheese. Adjust sauce thickness with reserved pasta water if needed.
  5. Return cooked chicken to the skillet and mix well until everything is heated through.
  6. Add drained pasta to the skillet and toss to coat with the creamy sauce. Taste and adjust seasoning with salt and pepper.
  7. Remove from heat and garnish with fresh chopped parsley. Serve immediately.

Notes

  • For a lighter version, use Greek yogurt instead of heavy cream.
  • If you prefer a dairy-free option, coconut cream can replace the heavy cream.
  • Use freshly grated Parmesan for the best flavor and smoother sauce.
  • To make it even more flavorful, deglaze the pan with a splash of white wine when cooking the onion and garlic.
