- 12 oz cheese tortellini (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, chopped
- 1/2 red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/4 cup fresh basil leaves, chopped
- 1/2 cup Italian dressing (store-bought or homemade)
- Salt and pepper, to taste
Instructions
- Boil a large pot of salted water and cook the tortellini according to package instructions. Drain and rinse under cold water.
- Chop the vegetables and combine them with the black olives and basil in a large mixing bowl.
- Add the cooled tortellini to the vegetable mixture. Toss gently to combine.
- Pour the Italian dressing over the mixture and toss to coat. Add salt and pepper to taste.
- Chill for at least 30 minutes before serving. Garnish with fresh basil before serving.
Notes
- Substitute vegetables based on preference, such as adding zucchini or carrots.
- For a tangier version, use balsamic vinaigrette instead of Italian dressing.
- If making in advance, add the dressing just before serving to prevent sogginess.
