Description

Tortellini Salad is a versatile, flavorful dish combining tortellini, fresh vegetables, and Italian dressing. Perfect for any meal or occasion.


Ingredients

  • 12 oz cheese tortellini (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, chopped
  • 1/2 red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup Italian dressing (store-bought or homemade)
  • Salt and pepper, to taste

Instructions

  1. Boil a large pot of salted water and cook the tortellini according to package instructions. Drain and rinse under cold water.
  2. Chop the vegetables and combine them with the black olives and basil in a large mixing bowl.
  3. Add the cooled tortellini to the vegetable mixture. Toss gently to combine.
  4. Pour the Italian dressing over the mixture and toss to coat. Add salt and pepper to taste.
  5. Chill for at least 30 minutes before serving. Garnish with fresh basil before serving.
