  • Hard-boiled eggs: Two, sliced.
  • Green beans: One cup, trimmed and blanched.
  • Cherry tomatoes: One cup, halved.
  • Bread: Four slices of whole grain or sourdough bread.
  • Mayonnaise: Two tablespoons.
  • Dijon mustard: One tablespoon.
  • Salt and pepper: To taste.
  • Fresh parsley: Chopped, for garnish.
  • Olives: For serving.
  • Olive oil: For drizzling.

Instructions

  1. Prepare all ingredients: Boil the eggs, trim and blanch the green beans, and slice the cherry tomatoes.
  2. In a medium bowl, combine the drained tuna with mayonnaise and Dijon mustard, mixing gently.
  3. Toast the bread slices until golden brown. Spread an even layer of the tuna mixture on two slices.
