Ingredients
- Tuna: One can (5 oz) of tuna in olive oil, drained.
- Hard-boiled eggs: Two, sliced.
- Green beans: One cup, trimmed and blanched.
- Cherry tomatoes: One cup, halved.
- Bread: Four slices of whole grain or sourdough bread.
- Mayonnaise: Two tablespoons.
- Dijon mustard: One tablespoon.
- Salt and pepper: To taste.
- Fresh parsley: Chopped, for garnish.
- Olives: For serving.
- Olive oil: For drizzling.
Instructions
- Prepare all ingredients: Boil the eggs, trim and blanch the green beans, and slice the cherry tomatoes.
- In a medium bowl, combine the drained tuna with mayonnaise and Dijon mustard, mixing gently.
- Toast the bread slices until golden brown. Spread an even layer of the tuna mixture on two slices.
- Layer the sliced hard-boiled eggs, blanched green beans, and halved cherry tomatoes on top of the tuna mixture.
