- 2 boneless, skinless chicken breasts (around 1 pound)
- 8 ounces of pasta (like penne or fettuccine)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 2 cups fresh spinach
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Optional: fresh basil for garnish
Instructions
- Cut the chicken into bite-sized pieces and season with salt, pepper, and Italian seasoning. Heat olive oil in a skillet over medium heat and cook the chicken for 5-7 minutes until browned and cooked through. Remove chicken and set aside.
- In the same skillet, sauté minced garlic for 1-2 minutes until fragrant. Add cherry tomatoes and cook for 3-4 minutes until soft and juices are released.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese and season with salt and pepper. Let the sauce thicken slightly.
- Cook the pasta according to package instructions until al dente. Add the cooked pasta to the skillet and toss with the creamy sauce. Stir in spinach until wilted.
- Return the chicken to the skillet and mix until everything is well coated and heated through. Serve with fresh basil and extra Parmesan cheese if desired.
