Description

Delicious upside down pineapple cookies with a sweet and tropical flavor.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup crushed pineapple, drained
  • 1/2 cup brown sugar
  • 1/4 cup maraschino cherries, halved

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the butter and granulated sugar.
  3. Add eggs and vanilla; mix well.
  4. In another bowl, combine flour, baking powder, and salt.
  5. Gradually add dry ingredients to the wet mixture.
  6. Fold in crushed pineapple.
  7. In a greased baking dish, sprinkle brown sugar on the bottom.
  8. Arrange maraschino cherries on top of the brown sugar.
  9. Pour the cookie batter over the pineapple and cherries.
  10. Bake for 25-30 minutes or until golden brown.
  11. Let cool before flipping upside down to serve.
